How come most of the photos have 3 pictures and some only have 1?

Camera. In the first season, one of the things we were trying to figure out is whether multiple shots were useful or not. Each camera uses a memory card that fills up as the pictures get taken and then we have to go out and swap cards. If we take single pictures, we don't have to go swap cards as often. But we eventually decided that the extra information from groups of three images was worth the more frequent trips to swap out the cards. So you'll find that there are more often groups-of-three than singletons.

Yep the 3s are MUCH easier, especially when telling if they are moving or eating 😃.

Also, in season 2 we switched from infrared-flash cameras to incandescent-flash cameras. The infrared flash cams could take 3 nighttime photos per trigger, but the incandescent flash cams can't.
